a juicy apple galette [v]

i guess galettes are one of my go-to desserts. i like to make them on weekdays but also if we have guests coming over. even if i am just in the mood for something else than dark chocolate (another fav of mine). since it only requires some basic ingredients and is quite forgiving in terms of measurements i bake it sometimes even out and about on vacation. this recipe has some tipps and tweaks which take it to the next level, but you can also only prepare the dough and throw some fruits on it and it will turn out amazing. you can take any fruits you like - here i'm going for apples, since they are in season and complement nicely the other flavours.

RECIPE

makes one medium size galette (8 slices)

dough

_ 120g flour (i like spelt)

_ generous pinch of salt

_ 20g brown sugar

_ 60g margarine, cold and palm oil free

_ 1-2 tbsp grappa or something similar

in a bowl mix the first three ingredients, then add the margarine in chunks

with your fingertips rub the margarine into the flour mixture until you end up with a breadcrumb consistency

now add the alcohol, press the dough togheter - as soon as it forms a ball you don't need to add any more liquid

place it in the fridge for an hour up to 24 hours (in my opinion it only gets better if you let it rest for longer than an hour)

preheat the oven to 200 degrees celcius or 180 degrees if you have a fan oven

optional, but definitely worth it:

after it has chilled form the dough into a thick rectangular and cut it in 4 layers (like a cake you want to fill with buttercream), spread a generous layer of margarine on three of them

then stack them on top of each other - this creates layers of dough and margarine (like a croissant pastry) which makes it crumbly, buttery and utterly delicious!:)

now you can roll out the dough (about 4mm thick) - it makes your life a lot easier if you do it directly on a parchment paper

frangipane

_ 30g ground almonds

_ 30g brown sugar

_ 2 tsp flour

_ 30ml oat cream (plantbased milk also works - just take a little less)

_ 10g margarine

_ 2 apples, sliced

_ mint-basil syrup (recipe follows soon)

combine the ingredients and spread it on the dough (leaving a border)

lastly add the apple slices and fold the edges over

before baking i like to slightly wet the edges and sprinkle some sugar over them and place some small knobs of margarine on the apples

then bake it for 25-35 mins

after baking it is really nice to brush the apples with a mint-basil syrup or a lemon syrup - it gives a nice shine and complements the sweetness perfectly

best enjoyed while still warm!
