a nice open-faced sandwich with caramelised onions, cream cheese and oregano
sometimes i really carve something savoury that satisfies my taste buds - and not just a bag of chips or some olives. since i quit eating cheese and this stuff, i'm still looking for different salty snacks to add to my repertoire. This sandwich is definitely a new go to snack for me. the flavours and consistencies play very well togheter and it's just pure joy to dig in.
NOTES:
_ i prefer cream cheese which is based on almonds - in my opinion just the bomb!;)
_ you can also prep a bigger portion of the caramelised onions and store them in the fridge for a few days
RECIPE
for one serving
_ one thick slice of a good bread
_ 2 red oninons (medium), sliced into rings
_ splash of cooking oil
_ 2 tbsp balsamico vinegar
_ small handful of almonds
_ almond cream cheese
_ few sprigs of oregano
_ olive oil
in a frying pan add a splash of oil and the sliced onions. fry them on a medium - low heat until they start to caramelise, then add the balsamico and continue frying. this will take about 15mins. remember: you want to cook it on low and slowly - so the sugars can caramelise and do not burn.
meanwhile in a another pan toast the almonds and the bread. now you just need to top the bread with a generous amount of cream cheese and the rest of the toppingss. to finish drizzle it with good quality olive oil - enjoy!
