this chocolate cake. oh yes! [vegan, refined sugar free]

browsing through sites, collecting ideas, getting inspired,... and in the end you've a recipe, in the best case. but mostly i end up with a long list of ingredients, combinations and cooking methods, but i have no idea how i should be able to decide for a creation! :D with this cake it was different - we had three ripe avos in the fridge, which had to be eaten soon. and magic! i knew what i wanted to create, yay! and the best thing is that it tourned out deeelicious!

baking plantbased isn't a must for me, but i like to alternate and reducing dairy and eggs. it's always a big challenge to bake something with unusual ingredients like avocados or sweet potatoes that my sisters actually likes. she's the best sis in the world, but concerning food you wouldn't believe we're related! ;D however, she ate a slice of this chocolate cake and hadn't even a suspicion that i sneaked something in she may not like, neither after the second slice... ;) she loved it! - so how could i not share the recipe with you guys?

RECIPE

for one 11cm cake

the frosting:

_1 avocado [ripe]

_30-40g cocoa powder

_30ml agave syrup

_30ml maple syrup

_good pinch salt

_60g dark chocolate, melted

_30g coconut oil, melted

_30g almond butter

_good splash rice milk [depends how ripe your avocado is and how soft you like the frosting]

the cakes:

_80g flour "type 405"

_40g buckwheat flour

_20g cocoa powder

_1.25 tsp baking powder

_0.75 tsp baking soda

_1/4 tsp salt

_50g coconut sugar

_50g agave syrup

_45g organic margarine

_120ml rice milk

_20ml apple cider vinegar

1// preheat your oven to 180°C/355°F and grease two 11cm springform pans

2// sift all your dry ingredients [except for the coconut sugar] in a bowl and set it aside

3// beat the margarine, coconut sugar and agave syrup until pale and fluffy, then add the dry mix and the rice milk - whisk until just combined

4// lastly stir in the apple cider vinegar - the batter will fill up and it will create air bubbles. stir it gently and as short as possible until no lumps are left

5// now distribute it in your tins and bake it for 28-33mins or until a skewer comes out almost clean

6// let them cool down for 10mins before you take the cakes out of the pans

7// for the frosting blend the avocado until smooth, the strain it through a fine sieve into a bowl

8// add in the rest of the ingredients and beat it until fluffly

!: my mixture separated after beating, but you can easily fix it - just put the frosting into a blender and blend it smooth again

9// finally you can frost your cakes and create nice swirls using the back of a spoon

then dig in and enjoy!
