little caramelised almond chocolate thingies

 

hello out there, i really hope everyone's doing fine. sometimes it feels really strange to write a post. Does anyone read anything of this stuff? and if there's someone - where do you come from, what do you love? in case you read this - i would love to get to know you a little bit more. The virtual world can be quite anonymous sometimes... you swim in this enormous ocean and you have the impression there's just nobody else.

However, i've created a recipe which is quick, easy, healthy for your soul and pretty damn tasty;) these chocolate thingies (i have no idea if that's even a word) hold for a couple of weeks, eventough i can't imagine you can resist for such a long time. Have fun making them - it will get quite messy, if you're like me (aka not having the patience to form the thingies with two spoons and ending up doing it with your fingers) and enjoy them!

 

 

RECIPE

makes around 20

_ 100g almond slivers

_ 100g chopped dark chocolate

_ 70g brown or white sugar

_ pinch of salt

preheat the oven to 180C/360F and place the almond slivers on a baking tray. once the oven is preheated put them in and let them roast for 10mins or so. make sure you check them from time to time so they don't get burnt.

meanwhile make the caramel by boiling the sugar, a pinch of salt and two tablespoons of water. you don't need a thermometer for this - simply let a drop of the caramel fall into a glass with cold water. if it gets hard as it has cooled down you're good to go. Add the roasted almonds to pan, stir around to coat them all and place the mixture back on the baking sheet to cool down.

now melt two thirds of the chocolate in a bain marie. As soon as everythings is melted and cooled down to body temperature (you can check it by touching a little bit of the chocolate with your lip) add the last third to quickly temper it. of course you could do this professionally, but for this recipe it's completely fine to do it like this :)

if your caramel coated almonds form too big chunks, break them apart before adding them to the chocolate. mix it around and place blobs of the chocolate mixture on a baking sheet. let them harden before you eat them (all;)
